棋子餅 Chinese Chess Cakes

棋子餅

材料
低筋麵粉80g
糖漿40g
食油20g
食用鹼水1g

餡料 
豆沙或蓮茸200g

掃面材料
蛋黃漿少許(蛋黃打拌即可)

180℃烘23-25分鐘

製法
1.低筋麵粉篩在桌面上,在粉堆中間挖一個穴,加入糖漿,食油和鹼水,拌勻搓成軟麵糰,再分成小粒。
2.軟麵糰包入豆沙,放入木餅模內造成棋子餅形後扣出。
3將棋子餅放在烤盤上,掃上蛋黃漿 ,入爐烤至金黃色,即可

40 g syrup
20 g oil
1 g food-grade lye
80 g low-gluten flour

FILLING
200g red bean paste

TOPPING
egg wash(a whisked egg yolk)

 Bake at 180C for 23-25 minutes

Method
 1. Sift the low-gluten flour on the table, dig a hole in the middle of the powder pile, add syrup, cooking oil and alkaline water, mix well to form a soft dough, and then divide into small particles.

  2. The soft dough add in bean paste,placed in a wooden cake mold ,buckle out.

 3 Place the pie pieces on the baking tray, sweep the egg yolk paste, and bake until golden brown, then.
